Biscuit de Savoie sans gluten



Le biscuit de Savoie est facile et rapide à réaliser : il est moelleux, sans matière grasse et on peut le parfumer selon ses goûts. Il est parfait pour les gourmands ! Et pour préparer ce biscuit, j’ai repris et adapté la recette de Mercotte qui est une merveille ! 

Ingrédients  

  • Fécule de pomme de terre   40 g 
  • Fécule de maïs                40 g 
  • Zestes d’un citron 
  • Vanille                        1 gousse 
  • Sucre semoule               80 g 
  • Œufs                            4 

Préchauffez le four à 180 ˚C. 

1. Beurrez et farinez le moule.

2. Tamisez les fécules de maïs et de pomme de terre. 

3. Montez les blancs en neige avec 40 g de sucre en trois fois dès qu’ils commencent à mousser. 

4. Fouettez les jaunes avec 40 g de sucre pour les faire blanchir. 

5. Ajoutez les fécules, les zestes de citron, la vanille et mélangez. 

6. Incorporez les blancs en neige à l’appareil à l’aide d’une spatule. 

7. Versez la préparation dans le moule, enfournez et faites cuire pendant 25 minutes. 

8. Laissez tiédir le gâteau avant de démouler et laissez refroidir sur une grille. 


Biscuit de Savoie (gluten free sponge cake)  

This sponge cake recipe is easy to prepare. It is gluten-free and it can be enjoyed with any seasonal fruit! 

Ingredients 

  • Potato flour         40 g 
  • Cornflour            40 g 
  • Vanilla pod          1
  • 1 lemon, finely grated zest 
  • Sugar               80 g 
  • Eggs                 4 

Steps  

Preheat the oven to 180 ˚C 

1. In a large bowl, sieve the potato flour and cornflour. 

2. Beat the egg yolks with sugar (40 g) until it becomes light yellow and fluffy. Stir the flours into the mixture until they are well incorporated into the batter. Add the vanilla pod and lemon zest. 

3. Beat the egg whites with the other half of sugar until glossy peak form. Stir 1/3 of the whipped egg whites into the sponge cake batter and then carefully fold the rest of the whites into the batter. 

4. Pour the batter into the tin cake and bake for about 25 minutes. 

5. Let the cake cool in tin cake for 5 minutes, remove and let cool on a rack.
